Za’atar Grilled Eggplant & Lentil Salad

The Recipe

Another quick and easy Middle-Eastern dish that is perfect as a healthy lunch or as a tasty side for dinner.


- Drizzle eggplant with olive oil and za’atar, salt and pepper and roast in the oven.
- Bring the soaked lentils to a boil and simmer for 20 minutes. Do not let them overcook and get soggy!
- Toss all together, dress with a little olive oil and fresh lemon juice.

Eggplant (small) 4
Salt 1 tsp
Kishmish Lebanese Za'atar Spice 1 tbsp
Lentils (soaked overnight) 1 cup
Pine Nuts 1/4 cup
Sultanas (or currants) 1/4 cup
Fresh Herbs (mint, parsley, dill) 1 cup
Lemon Zest 1
Lemon Juice 1
